FESTIVAL OF LIGHTS
Deepavali, also known as the Festival of Lights is celebrated by Hindus all over the world. Little clay lamps are lit on the day to signify triumph over evil. Many Hindus host open houses to friends and family, as they feast on culinary delights and festive treats together.

Here are five easy recipes, giving you more time to mingle and feast with your guests!

BOMBAY OMELETTE

A perfect pick me up, or have it as a breakfast option on lazy days! Whisk eggs together (depending on the number of guests you have) until well combined, then whisk in the onion, tomatoes, coriander, chili, turmeric, garam masala and cumin powder.

Put spinach leaves into a bowl, squeeze just enough lemon
to coat, toss together, then leave to one side. Melt butter in a medium non-stick frying pan over a medium heat and ladle in omelette mixture. Swirl the eggs around for 2 minutes, pushing them to the middle and tilting the pan so that all the mixture has a chance to set.

Leave it for a minute, then slip the omelette on to your serving plate. Top with the dressed spinach and fold the omelette in half. This can be served as a dish to accompany your rice or bread.
